Abstract : The construction of HACCP system controlling the quality during processing the square west ham is introduced. Much attention is paid to the core of HACCP system- hazard analysis and critical control point, and there is a analysis of CCP to the using of food additives. And then the effective application of HACCP system in controlling food quality is reviewed. It will give a base to make our country attach more importance to control the quality and safety of the ham products.
