Abstract£ºThis paper brief introduced the principles and character of HACCP which was also leading in production technics of fruit and vegetable crisp of vacuum frying, analyzed all hazard factors, established the critical control point, came up with the solution in order to diminish the hazard factors to minimal limits and improve the quality of the import product.
