Abstract: During the establishing and implementation of HACCP and Food Safety Management System, the most important thing is always the controllment of pathogenic microorganism. The quick inspection methods for pathogenic microorganism in food are benefit for not only verifing the control measures in time, but also taking corretion and correction measures to potential unsafety food. It is necessary for food safety to make quick inspection of pathogenic microorganisms, for the virtue of accuation, sensitivity, time-saving, labor-saving and low costaction. The quick inspection methods of pathogenic microorganisms in the food include molecular biology detection method, immunology method, metabolic method, quick inspection paper, bacterium direct counting method, automatic microbial monitoring system etc. This article has summarized the quick inspection methods of pathogenic microorganisms in the food.
